Every piece on the menu is available at every rung, so the only question worth answering first is how much you actually want. We would rather talk you down than have a plate come back.

Where most people land
A cayenne and paprika dredge with a little brown sugar, so the heat arrives late and leaves quickly. Warm rather than hot. This is the rung we would put in front of someone who did not ask, and about two-thirds of the room orders it.
The brine is the recipe. The rest is technique.

Yes. Everything is tossed to order, so a box of wings at 04 and tenders at 01 in the same order is normal.
No, and we do not run a wall of fame. It exists because a few people genuinely want it. If you have not eaten 04 comfortably, do not start at 05.
