One variety, grown for frying
Lady Rosetta — high solids, low sugar, so it browns evenly instead of going bitter at the edges. Whole crop from three farms, not a commodity blend.

Ridge-cut at 2.1mm
Thicker than a standard crisp and cut with a wave, which is what makes the noise and what lets the seasoning stay on.

Kettle-cooked in small batches
Sunflower oil, batch-fried rather than continuous. Slower, noisier, and the reason the texture varies bag to bag.

Seasoned warm, bagged immediately
Seasoning goes on while the crisp is still hot so it sticks without a coating agent. Nitrogen-flushed and sealed within the minute.

Potato, sunflower oil, sea salt. Nothing to hide behind, which is exactly the test.

The orange on the Cheddar bag is cheddar. There are no colours on the ingredient list because there are none in the bag.

Chilli Ranch, and it is genuinely hot rather than decoratively hot. Charred Onion is savoury, not spicy.
The cheddar is aged twelve months before it is dried, so batch size is fixed by how much cheese was started a year ago. We will not substitute powder.
