A butter counter
and a small pantry
Spa Terminus, London
Eleven makers, bought by the batch and sold under their own names. Everything here is chilled next-day, and everything says who made it.
This week at the counter
Nine butters, cut to order. Plus the salt, honey and vanilla we kept being asked for.
Three aisles, no filler

How this shop works
We do not make any of this
Eleven makers, named
Every item is bought from the person who churned it and sold under their name, not ours. If the label says Applewood Smokehouse, that is who made it and where it came from.
Bought by the batch
We buy what a maker actually produced that week rather than asking for a volume they would have to change their method to hit. When a batch is gone it is gone until the next one.
Priced by weight, openly
Every item shows its price per 100g next to the pack price. A 180g compound butter is not cheaper than a 250g block and we are not going to arrange the shelf to suggest it is.
Four things in everything
What is actually in it
01
Cream
Single-herd, never pooled between farms.
02
Culture
Live, 18 hours, before the churn turns.
03
Salt
Flaked at the end, by hand, never in the churn.
04
Time
Barrel-churned slowly — the reason it tastes of something.
Chilled logistics
How it gets to you cold
01
Order by 14:00
Anything ordered before two o'clock is cut, wrapped and labelled the same afternoon.
02
Packed in wool
Sheep's wool liner and one frozen gel pack. Both go in the kerbside bin — the wool composts.
03
Next-day, chilled
Tracked next-day across the UK, Saturday optional at checkout. It arrives under 8°C.
From the order notes
Did it arrive cold
“Arrived genuinely cold, wool liner still frozen at the bottom. I have had chilled boxes from much bigger companies turn up warm, so this is not nothing.”
Priya R.
Ordered the Starter box
“The unit pricing is the reason I keep coming back. I can tell at a glance that the trio is the sensible buy and nobody is hiding it from me.”
Tom H.
Ordered the Butter Trio
“Bought the smoked for a baked potato on a whim. It is far stronger than supermarket smoked butter and a 180g block has lasted a month.”
Eleanor M.
Ordered Applewood Smoked
Before you order
Keeping, delivery, and the honest bits
Yes — wool liner and a frozen gel pack, tracked next-day, arriving under 8°C. If it turns up warm tell us and we replace the order, no photograph required. That is why the 14:00 cut-off is firm rather than a suggestion.
Because pack sizes here run from 120g to 320g and comparing them otherwise is guesswork. The unit price sits next to the price on every product page and on your invoice. It is the one thing we will not make you work out.
None of it. Larder is a shop, not a dairy. Every item is bought from the maker named on its label and sold under their name — Salt & Cream Co., Terra Provisions, Applewood Smokehouse and eight others.
Everything on the butter counter contains milk. The ghee is clarified so the lactose is removed, but it is still a dairy product and is not suitable for a milk allergy. The honeycomb and honey butter are not suitable for infants under twelve months.
Most of it, yes, and each product page says so specifically. The exception is the cultured butter — freezing flattens the culture and you lose the tang you paid for. The trio should not be frozen in its pots.
It goes out of stock until the maker churns again, which can be a fortnight. We do not backfill with a different maker's butter under the same listing, because the label would then be wrong.

Notes
Why cultured butter tastes sour and yours might not
Eighteen hours of live culture before the churn, and what happens to it in a freezer.

The case for buying butter by weight
A 180g compound and a 250g block are not comparable, and most shelves are arranged to hide it.

What a batch actually means
Buying what a maker produced, rather than asking them to produce what we can sell.
