A morning at the dairy
Sep 28, 2025 · By Marcus Park

We picked up the cream at 5:30am. The fog was sitting in the valley in that way it only does in spring — low and heavy, almost a second sky.
The Kingsbury family has been running this dairy for three generations. Forty cows, all on pasture rotation. We've worked with them for six years and they've never once compromised on what the herd eats.
Grass-fed, really
Grass-fed on a label usually means the cow ate grass at some point. For our farmers, grass-fed means the cow's diet is 95%+ pasture and hay — supplemented only with brewer's grain from the local brewery. The butter is yellower, more beta-carotene, more omega-3s.
